Carrot Dinner Rolls

These rolls are a family favorite around our table on Thanksgiving. My grandmother created this recipe in the 1940’s. They are soft and sweet best served warm with butter.

You can make the dough ahead of time and freeze or refrigerate until ready to use. Yields 20-24 rolls.

Soft Warm Sweet ~ Carrot Dinner Rolls

Prep Time: 30 minutes

Cook Time: 20 minutes

Yield: 20-24 Rolls

Ingredients

  • 1 (package) Yeast
  • 1 1/4 Cup Warm Water
  • 4 Tbs Melted Shortening
  • 1 tsp. Salt
  • 4 Tbs. Sugar
  • 1 Egg, Beaten
  • 1 Cup Cooked Carrots, Mashed
  • 3 1/2 - 4 Cups of Flour

Instructions

  1. Soften yeast in 1/4 cup of warm water
  2. Mix 1 cup warm water, melted shortening, salt, sugar, beaten egg and mashed carrots
  3. Add yeast and flour
  4. Knead well
  5. Cover and let rise until double in size
  6. Form into rolls and let rise again till light (about 1 1/2 hours)
  7. Bake at 400* to 420* Degrees

Notes

Note** Can blend carrots in blender with water carrots were cooked in. Measure carrot water then deduct that much warm water called for in recipe. Sieved carrots are better in this recipe.
