Pecan Meringue ~ Festive Fall Winter Dessert

Pecan dishes are well known southern creations. Betty was born deep in Arkansas in a town not well known Tyronza. Her mother made so many southern dishes that could make your mouth water. Here is one recipe that has been in my family for generations. 

Best served warm with hot butter rum or hot chocolate.

Pecan Meringue ~ Festive Fall Winter Dessert

Cook Time: 30 minutes

Total Time: 45 minutes

Pecan Meringue ~ Festive Fall Winter Dessert

Ingredients

  • 1 1/4 Cups Coarsely Crumbled Pound Cake
  • 1 Cup Chopped Pecans
  • 3 Egg Whites
  • 1 tsp Vanilla
  • 3/4 Cup Sugar
  • Whipped Cream

Instructions

  1. In a large bowl combine pound cake crumbs and the chopped pecans
  2. In smaller mixer bowl combine egg whites and vanilla
  3. Beat at medium speed of electric mixer till soft peaks form
  4. Gradually add sugar, beating till stiff peaks form
  5. Fold beaten egg whites into crumb mixture
  6. Turn into greased and floured 8x1 1/2-Inch round baking dish
  7. Bake in 325* oven for 30 minutes
  8. Serve with whipped cream
