A twist to the normal rice pudding dish. Great served with a caramel sauce and a nice black cup of coffee.

Baked Apple Date Rice Pudding ~ Festive Fall Winter Dessert


  • 2 Slightly Beaten Egg Yolks
  • 2 Egg Whites
  • 2 Medium Apples, Peeled, Cored and Finely Chopped ( 2 Cups )
  • 1 1/2 Cups Cooked Rice
  • 1/2 Cup Milk
  • 2 Tbs Butter or Margarine, Melted
  • 1 tsp. Vanilla


  1. In a bowl stir together; egg yolks, apples, cooked rice, milk, dates, sugar, butter/margarine and vanilla
  2. Beat egg whites to stiff peaks (tips stand straight)
  3. Fold egg whites into apple mixture
  4. Turn into an un-greased 1 1/2-quart souffle' dish or casserole
  5. Place dish in a larger baking dish
  6. Pour boiling hot water into larger baking dish approx. 1 inch
  7. Bake in a 325* oven about 1 hour and 25 minutes or till knife inserted just off-centered comes out clean
  8. Serve warm or chilled
